The secret to good espresso is the La Marzocco espresso maker. At Fuel in Wallingford they have a four head machine with a custom wrapped front. As an aside, what made Starbucks great was that they used the La Marzocco machines, but with all the milk, foam, and sugar it was hard to tell about the coffee. The other secret is to maintain the machine to have enough pressure in it’s double boiler system.
At Fuel the double espresso shots that I get are always perfect. The color, creaminess, the full bodied flavor, that is never bitter, all add up to a well run operation.
All of that is a lead in to what I discovered yesterday at the café. Coffee will only get you so far, pastry is what gets you seated. For the past month that I have been going to Fuel the pastry case has been dismal. I stop at the QFC on my way to get an apple fritter. Yesterday there was what looked like calzones. I asked, and was told that no, those were not cheesy calzones, but a savory pastry.
It is a pie crust type of pastry with a vegetable filling. It was delicious. It is fresh, with distinctive flavor. The consistency firm, and chewy. Absolutely like nothing else that I’ve tried.
The same owner that has the fore thought to make a perfect espresso in Seattle has opened the High Five Pie http://www.high5pie.com/ I’ve seen the pie slices, lonely, there in the case, but now can’t wait to try one. It’s kind of exciting to find a brand new, unique, pastry experience. Maybe this week end I’ll make a special trip back, or come to think of it, we are working on Capitol Hill tomorrow, so maybe I’ll try to find their second location, that I think is on 19th, and about Republican.

In 1984 I got my Real Estate license and worked in a small company called Advance Properties. The owner was extremely interested in Real Estate, building, and land development. Most of his work was concentrated North of Seattle. Since the 1970s I had worked for Real Estate agents in Seattle as a contractor, mostly preparing properties for rent, and sale.
After a few years my skill level increased considerably concerning land use, building code, and development practices. Escrow, and lending offices were housed at the Advance Properties building so it was easy to get involved in all aspects of Real Estate. It was very much a family owned, and operated business.
Over the years my Real Estate license has been at a variety of Real Estate companies, and offices. Nothing compares to those early years, or that sense of family. Real Estate has gotten to be corporate owned.

My Real Estate license is at Skyline Properties in Northgate. Skyline is a locally owned company that is a desk fee office. There is a wide variety of diverse agents. It helps me with some of the other projects that I have, and mentoring that I do, to be able to work with people from other cultures.
Here in Seattle we are close to Vancouver BC and are the gateway to China. Boeing has a great trade relationship with China, as does Microsoft have with all of Asia. We are a culturally diverse community, and it helps me to be invlolved.
